Want to get in on the cupcake craze? Vanilla cupcakes are really simple and quick to make, and can definitely impress your friends!
Plus they make a great weekend snack!
Ingredients:
- 4oz butter (112 grams)
- 4oz caster sugar (112 grams)
- 4oz self raising flour (112 grams)
- 2 large eggs
- A splash of vanilla essence
- (I call this my 4-4-4-2 recipe – a nod to you football fans out there!)

Method:
This couldn’t be easier!
Melt the butter for 30 seconds in the microwave. Sift the flour and add it to the butter.
Add the rest of the ingredients, and either mix together by hand or beat with an electric mixer. When all your ingredients are combined, spoon into paper cases. This makes about 12 cupcakes! Bake on 180˚C for 12-14 minutes or until a toothpick inserted into the middle of a cupcake comes out clean (no wet batter.)
Buttercream Icing
Ingredients
- 500g icing sugar
- 250g softened butter
- A splash of vanilla essence
- Tablespoon water

Method:
Sift the icing sugar into a big mixing bowl, add the butter, vanilla and dash of water. Use a hand mixer (mine was £5!) whisk on a medium speed until all ingredients are combined and creamy. Taste!
You can either dollop this on the top, or if you’re feeling like a challenge, try piping it!

If you reeeallly want to impress, then you can colour the icing, buy some cool sprinkles, sprinkle some glitter and decorate away!
