Mini Egg Cookies

Sometimes, you have one of those days where there’s so much to do, you barely have a minute to yourself. No time to eat, process, think, just head down and work. Ugh! So, to get my head out of work-mode, I bake! Not anything complicated or unusual, even a one-bowl bake will do it. Preferably with yummy ingredients that can be noshed on the way!

Introducing… Peanut butter, mini egg cookies!

For those of you non-Brits, mini eggs are pastel bites of delicious chocolatey goodness, encased in a sugary shell made by Cadburys. Nom.

Dontcha wanna make these at home? Yeah you do… and you can make it all in ONE BOWL BITCHES! From bowl to baked in half an hour, what could be better?!

Recipe (adapted from Averie Cooks)

Ingredients:

  • 113g unsalted butter
  • 80g smooth, full fat peanut butter
  • 220g light brown sugar
  • 100g caster sugar
  • 1 egg + 1 yolk
  • Dollop of vanilla bean paste
  • 160g plain flour
  • 90g jumbo oats
  • 1/2 tsp bicarbonate of soda
  • Family bag of mini eggs (3/4 per cookie)

Method:

  • Melt together butter and peanut butter in a bain marie
  • When it’s all melted together, add in both sugars and mix until combined
  • Set in fridge for 5 mins until cooled, then add the egg and yolk, plus vanilla bean and mix again
  • Stir in flour, oats and bicarb until combined
  • Shape cookies into balls about 1 tablespoon in shape. Doing this made 20 cookies for me
  • Push 3-4 eggs into the top of each ball
  • Bake on 165oC for approx 11 mins
  • They will look underdone but don’t fear, wait until they cool! (They will be delicious!)
  • Serve with cup of builders tea!

I made Blueberry Bundt cake, chocolate, vanilla and guinness cupcakes, chocolate chip shortbread, red velvet giant cupcake, lemon poppyseed loaf cake, dairy and gluten free peanut butter caramel cookies, and brownies! I also had lots of help, with carrot cake, victoria sponge, cheesecake, teacakes, jam tarts, lemon meringue and cookies donated!

Rice Krispy addiction

You know those little chocolate krispy cakes of goodness that you used to much when you were little? Made with dark chocolate when you were told to be healthy, and milk or white as a treat?

Yeah… addictive RIGHT?! Also one of the easiest things to make when you need a quick chocolate fix!

I’ve made 2 of these beauties recently, one a classic milk chocolate with white chocolate drizzled on top:

So scrummy and brought me straight back to my childhood! I also made a second batch which was slightly more gourmet: White chocolate and peanut butter with salted caramel topping…

These were totally addictive and went down extremely well. All I did was add a dollop of natural peanut butter to melted white chocolate and mixed well, then poured some of my homemade caramel sauce (recipe here) on top and put in the fridge to set. I will definitely be making these again when I need a quick choccy fix!

I’ve been on a baking bonanza this Xmas eve, baking 3 special goodies. I’m revealing 2 to you today as one is a surprise! So, here are my extra quick marshmallow Krispy cakes that will make you feel like a kid again, as well as brownies that you can’t stop eating, peanut butter crack brownies!!

Slutty brownies and triple chunk cookies

Hi CakeSnobs! Have I got a post for you… a double whammy of brownies AND cookies! So my little brother came home from university and requested some baked treats. I made him Slutty Brownies – a decadent triple layer of cookie, oreo and brownies.

These are melt in your mouth goodness bites. Just put together a layer of cookie dough, layer oreos on top, then pour your favourite brownie recipe over the whole thing. They ain’t pretty but they sure do taste good! Next up, triple chunk cookies. I love a cakey, ooey gooey cookie and this is what these were. Soft cookie dough filled with white, milk and peanut butter chunks make these cookies addictive!

Chocolate, peanut butter, butterscotch Cupcakes!

Chocolate, peanut butter, butterscotch Cupcakes… what a mouthful! But seriously, these cupcakes were ADDICTIVE, right down to the last buttery mouthful!

I made these cupcakes for a close friends’ leaving party, he’s going to Australia so we sent him off in style! I topped these roof-sticking peanut buttery cupcakes with red, white and blue sprinkles as well as Australian red white and blue M&M’s!

The filling definitely made these cupcakes, a mix of peanut butter, butterscotch and golden syrup formed a sweet and salty cupcake, topped with Marscapone cream cheese frosting. Not for the faint hearted!

M and M Cookies

This recipe is for sugary, chewy cookies! Easily adaptable for gluten-free, these cookies can use whatever you have to hand! I used M&M’s and Reese’s Pieces.

Ingredients:

130g plain flour (To make GF – use gluten free plain flour and 1/4 tsp xanthan gum)
1/4 teaspoon baking powder
85g melted cooled butter
130g soft brown sugar
50g caster sugar
1 egg
1 tsp vanilla extract/paste
150g M&M’s or choc chips!

Method:

Cream the butter with the sugar until combined. Then add in the egg and vanilla.
Mix well.
Sift in the flour a quarter at a time and mix with a wooden spoon until well combined. Sift in the baking powder and mix.
Keep mixing – dough will be a bit crumbly at first, but will settle into a hard doughy mixture.
Stir in your M&M’s or choc chips (or both if you’re feeling indulgent!)
Tear off mixture and roll into about 10 evenly-sized cookie balls and place on baking tray on baking parchment. Spaced these out and flatten slightly!
Bake on 200oC for about 12-15 mins or until cookies brown slightly at edges.
