Chocolate Oreo Cake – Dairy Free!

When your little brother turns 21… you have to make him something yummy right?! Even when he doesn’t want a party and only wants a family BBQ you of course have to make the best chocolate cake ever. So that’s how this fudgy, soft chocolate oreo cake came to exist.

To make it dairy free, I created a ganache of dark chocolate with my new favourite dairy substitute: Oat Cream! It has the added bonus of some super lovely packaging:

Chocolate cake, ganache and oreos. Perfect combination. So happy (belated) 21st birthday to my little bro (even though you’re way taller than me!)

Brownies Galore!

I love being asked to make goodies for someone’s special day, and it means even more when I know that person… because I want more than anything to make something amazing! When a colleague of mine asked me for simple brownies and snacks for a post-wedding brunch, I knew I just couldn’t make something simple! I decided to do brownies… 4 ways!

I made:

  • Classic triple chunk brownies
  • Oreo Brownies
  • Salted Caramel brownies
  • Cookie dough brownies

Whew! I tried 4 different recipes as well as making the salted caramel and cookie dough from scratch of course! I also made my more-ish sweet n salty pretzel bites as well.

For the Classic triple chunk brownies and Oreo brownies I used my best brownie recipe – for the Oreo variation I left out the chocolate chips and instead pushed broken up oreos into the batter before baking.

For the Cookie Dough Brownies I used this recipe – I only wish I got to taste them!

I used Edd Kimbers recipe, but for the caramel I used Nigella’s method. These kinda went everywhere but tasted damn good! To make again, I would probably use this recipe!

So… I’m all brownie-d out!

 

Slutty brownies and triple chunk cookies

Hi CakeSnobs! Have I got a post for you… a double whammy of brownies AND cookies! So my little brother came home from university and requested some baked treats. I made him Slutty Brownies – a decadent triple layer of cookie, oreo and brownies.

These are melt in your mouth goodness bites. Just put together a layer of cookie dough, layer oreos on top, then pour your favourite brownie recipe over the whole thing. They ain’t pretty but they sure do taste good! Next up, triple chunk cookies. I love a cakey, ooey gooey cookie and this is what these were. Soft cookie dough filled with white, milk and peanut butter chunks make these cookies addictive!

Oreo Surprise Cupcakes

I think I’ve discovered the BEST buttercream/frosting combination. Oh yes. Marscapone cream cheese buttercream with Oreo cookies crushed on top.

I couldn’t stop licking the bowl after I dished up this buttercream onto surprise birthday cupcakes! What was the surprise? All the cupcakes had something hidden in them, either a whole Oreo, some Vice Versas (remember them?!) or a square of chocolate.

Oreo cream cheese cupcakes

Oreo cream cheese cupcakes are definitely a reason to celebrate. Tart but creamy bites of goodness they are so delicious that you can’t just stop at one!

I made these for the Jewish festival of Savuot a few weeks ago, to share with friends and family.

Recipe:

Ingredients:

  • 2 packets oreos (or any other biccy) roughly 25 biscuits
  • 450g cream cheese (I used Philadelphia Light)
  • 120g caster sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 120g sour cream (again I used half-fat)

Method:

  • Beat cream cheese with electric whisk until smooth
  • Add sugar, vanilla and eggs. Beat until combined.
  • Crush remaining biscuits and add to the mixture. Taste!
  • Line cupcake tray with 15 paper cases and place whole biscuit at the bottom.
  • Spoon mixture into cupcake cases on top of biscuits
  • Bake at 180 until filling is set, about 20 mins.
  • Chill overnight!

PS make these gluten free by substituting the oreo for GF biscuits 🙂
